 3 tbsp fresh lemon juice (from 2 lemons)
 3 tbsp chopped fresh cilantro

 2 tbsp honey
 1 tbsp fine sea salt
 2 tsp ground cumin
 2 tsp paprika
 1 tsp crushed red pepper
 2 lbs leg of lamb, trimmed and cut into 6- to 8-oz. pieces
