This Moroccan Spiced Vegetable Couscous dish is fresh and delicious. It’s made simply with fresh yellow bell pepper, carrots, red onion, chickpeas, peas and herbs and spices.This dish sort of reminds me of taboulleh, an herded Lebanese salad with Bulgar. This vibrant Moroccan dish is packed full of vegetables and nutrients and best of all its super simple to prepare.

 2 tbsp olive oil
 1 medium red onion chopped
 1 yellow bell pepper chopped
 1 carrot chopped into cubes
 2 cloves garlic minced
 ¼ tsp salt
 ¼ tsp paprika
 ½ tsp ground coriander
 ¼ tsp turmeric
 ½ tsp celery salt
 ½ tsp ground cumin
 A good handful fresh parsley chopped
 ¼ tsp cayenne pepper optional
 6 Peppadew Piquante peppers chopped, mild or hot
 1 cup frozen peas
