 1 lb chicken thighs or breast cut in bite-sized pieces
 ½ cup canola or cooking oil
 23 Curry leaves
 1 tsp minced ginger
 2 tsp minced garlic
 1 medium onion diced
 2 medium tomatoes diced
 1 ½ tsp paprika
 8 oz potatoes cleaned and cut into cubes
 1 15 oz can chickpeas rinsed and drained
 2 tsp cayenne pepper optional
 1 ½ cups or more chicken broth or water
 Salt and pepper to taste
